Utah – The Green Urban Lunch Box hiring AmeriCorps VISTA for Development Work

The Green Urban Lunch Box is seeking an AmeriCorps VISTA to Help with Development in Salt Lake City Utah. The Green Urban Lunch Box is a young and innovative organization based in Salt Lake City. Our mission is to revitalize neglected space to grow food for our community. But most importantly we focus on creativity and innovation to solve the age old problem of hunger. We believe that waste reduction and creativity can go a long ways toward helping low-income families have access to fresh healthy food. We are a fast growing, ever changing organization that encourages our employees to help shape the future of our organization and think outside the box.

We operate four programs in Salt Lake City. Our first program is a 35-foot school bus converted into a mobile greenhouse and farmers market. Our mobile market brings fresh produce to disadvantaged community members. Our second program is our Fruit Share Program, which seeks to reduce food waste and meet our community’s need for fresh, local, low-cost produce. Partnering with local organizations like Salt Lake City Fruit Share, SLCGreen, and Real Food Rising, our program works by cultivating relationships with property owners who have fruit trees and volunteers who harvest excess fruit and deliver it to local food banks and community agencies. Our third program is the Back-Farms which provides elderly community members with local volunteers to work together to convert their backyard space into urban farms (fruit and vegetable gardens). The Back-Farms program provides our participants not only with easy access to produce, but also facilitates a connection with the plot’s volunteer creating healthier communities. Lastly, we run a farmer training program that provides the tools and resources (land, mentoring, water, and equipment) necessary to help new farmers start a career in small scale agriculture. All of our programs are growing rapidly and we are looking for team members to help take them to the next step.

Duties: The VISTA will work to asses, log, and increase our funding options and funding available for our organization. Some knowledge of traditional fundraising is helpful but more important is the ability to think critically and bring new ideas to the table. You will gain valuable skills by learning how to do the following tasks: Prepare a report on our current funding situation with recommendations for the board. Look for additional funders based on your plan approved by the board. Seek funding according to the fundraising plan approved by the board. Attend outreach event where you will network for the organization in order to share our vision and build our reach.
